Easy Pork Piccata!

Are you looking for delicious, easy, and low budget dinner? Yes, Pork Piccata is a great choice! Pork chops are not so expensive, easy to cook, and delicious. Having young kids, I prefer to make cooking easy on weekdays. I didn't use any special ingredients, so you can cook using the few ingredients in your fridge!


Look at the pork chops, they are just $5! Season them with salt and pepper. Pork chops cook better when thawed at room temperature.

Place 2 eggs and 8TBS of grated parmesan cheese into a dish. Mix well. The mixture will be thick like a pancake mixture. 

Place all purpose flour in another dish.  

Coat the pork chops with flour. Make sure not to over coat in flour.  

Completely coat them with the egg mixture. The mixture will apply thick so don't worry about the presentation.  It will still taste delicious.

I started out with only one egg and 4TBS of cheese but ran out of mixture for these Pork Chops. The picture below shows my mistake.  Opps.  Its better to use 2 eggs and 8TBS of cheese.

Heat 2TBS of olive oil in a skillet on medium-low heat. Then place the pork chops in the skillet and cover.  Sear on each side for 7 min. 

See, I told you it would look delicious. You will just have to trust me that it tasted great.

< Ingredients>
     Boneless Pork Chops                  1LBS
     All Purpose flour    
     Egg                                                2
     Grated Parmesan Cheese           8TBS
     Salt & Pepper to taste

<Instructions>

Yum! French toast!

It's my favorite breakfast, French toast! Usually I use white bread for French toast, but today I tried using Italian loaf. I had some leftover from last night's dinner and wanted to use. This gave me an opportunity to try something new. This recipe is the same as normal white bread.



First, combine eggs, milk, sugar, and vanilla essence. Mix well. Just combine and mix. It's pretty easy for kids, isn't it? After kids help mommy, kitchen gets a little messy though.....it's okay.  




Next, place slices of Italian loaf in a container and microwave them for a minute to soak bread well in milk mixture. Then flip them over and microwave them for another minute.


 Next, warm pan to around 350-375 and then put butter on it. It already looks yummy without bread. I like the smell of melted butter!!

Place the slices of Italian bread on the pan.



It's a great season for strawberries and blueberries! This French toast matches them well for breakfast. Eat and enjoy!!!
